Bibo is Garcia's internationally-inspired tapas-heavy brasserie in Marbella (with a sibling establishment in Madrid). Although its website says the restaurant strives to be a "fun place," there is some imaginative and sophisticated cooking going on, showcased here in this 2-volume, slipcased set. And happily it is in both English and Spanish.
Garcia's status as one of Spain's foremost cooks has allowed him to travel extensively and experience food from many countries. At Bibo, he stitches together inspirations from his travels to create dishes that reflect multiple influences. For example, cornmeal brioche buns served with fried baby squid and chilmole mayonaise; Russian potato salad with fried quail eggs; broccolini and kale salad with mustard, peanuts, and sesame; tarte tatin with rosemary-scented white chocolate cream.
